Mexican Monday Calls For Enchilada Casserole

Here's a great recipe for Enchilada Casserole that my family is always happy to sit down to...

Start with 2 lbs. lean ground beef in a skillet with ½ cup chopped white onions. You will need one bag of nacho cheese Doritos, one pkg. American cheese slices or sometimes I switch it up with Cheddar or Monterey Jack.

Next, you need 2 cans of cream of mushroom soup, one can mild enchilada sauce and one can chopped green chilies. In a 9x12 or 9x13 cake pan, crush Doritos chips to layer the bottom of pan but not too finely.

Brown the meat and onions in a skillet and then layer that on top of chips until covered, next add a layer of whatever type of cheese slices you chose to cover completely. Next, mix the soups with the enchilada sauce and chilies in a mixing bowl blending thoroughly. Then, pour that mixture on top of the cheese slices to cover completely. Shake pan slightly to let mixture settle down through the layers. Bake for about 30-40 minutes in preheated 350 degrees oven or until sauce is thoroughly bubbly. 

And...a great side dish to go with this entree is Mexican Corn. 

Take two cans of whole kernel corn and dump them in a saucepan along with one can of Ro-tel (chopped), one can of black beans and one package of cream cheese that has been cut into chunks. Heat until mixture is bubbly. 

This meal is well-paired with a tossed salad of iceberg lettuce, shredded carrots, chopped tomatoes, sliced black olives and Spicy Ranch Dressing.  The cool thing about it is that this meal takes less than an hour to prepare, but your family will think you spent all afternoon on it. 

And if you are looking for a sensational dessert idea for this meal, try topping some vanilla ice cream with mixed berries and crushed shortbread cookies. Yum!
